Can Salad Bars Be Saved? They’ve been crucial for supermarkets, but germ fears might make them a pre-pandemic memory. Grocery stores are doing whatever it takes—including deploying robots—to save their lucrative salad bars from becoming a relic of pre-pandemic shopping.  Published 7/2020.

SPEAKING EXPERIENCE

I like to talk. And I have lot of experience. That means conference people like having me on their stage (and I love it, too).

Panel Discussion: Eco-Feminism and the Fluid Future of Consumption

Restaurant Design in the Age of On-Demand Food Delivery

Little did I know when I was on the panel for this talk how relevant this topic would be.
This quote from the talk was prescient: “Restaurants aren't dead; they're just different.
Or at least, they’ll have to become much more different from what they are if they’re
to thrive in a rapidly evolving industry.” 03/2020

Women in Design: Let's Take Over the (design) World I did this talk with Deborah English (DL English Design), a frequent collaborator. We shared stories of legendary women in design and celebrated what makes women great to work with and for. Designer Faith Bartrug said: “Gabby and Deborah had the audience feeling empowered and refueled. Lightbulbs were going off, and the whole room was illuminated.” It went so well, we did it 2 years in a row! 03/2018

I moderated this unique panel on a unique topic around gender identity and how it influences consumers’ considerations towards sustainable consumption, placing women at the forefront of conscious consumerism. However, Gen Z and Millennials are blurring identity lines, creating a more fluid future with sustainability and social equity at the core of their ethics and purchasing behaviors. This expert panel will discuss the evolution of sustainable consumerism and the role of feminism and their critical role in designing retail environments of the future. Panel included: Doug Schmidt, Retail Consultant, (previously of REI and Yeti), Sheri Blattel, Associate Principal, Director of Retail at Cushing Terrell, Rebekah Matheny, Associate Professor of Interior Design at The Ohio State University, and Royce Epstein, Design Director, Trend Forecaster and Founder at Dissent by Design.
